How to Make Prime Rib Roast Cooked in Coals?
Brush outside of roast with mustard coating, then place meat on a rack. Place rack over a baking sheet lined with foil. Pat salt into mustard but reuse all excess salt which falls onto foil. Protect hands with mitts. Using 1 or 2 long-handled forks, lower meat into circle of coals. Finally, use long-handled tongs to bank a row of hot coals around roast.
Ingredients
1 (7- to 8-1/2-lb.) beef 3-rib roast, large end
1/2 cup Dijon-style mustard
About 2 cups coarse salt or kosher salt
About 4 hours before serving, trim fat from roast; pat roast dry with paper towels.
Brush outside of roast with generous coating of mustard. Pat as much salt as possible into mustard, turning roast to coat all sides. Set asoned meat aside on a wire rack 30 to 60 minutes to dry, then pat more salt on any moist or bare spots.
Build a large charcoal fire in grill. After 30 to 40 minutes, when coals are very hot, spread out coals, clearing a space center large enough to hold roast. Protect your hands using oven mitts. Carefully place seasoned roast, rib-side down, in open space among coals.
With tongs, bank a row of coals around roast, with coals barely iching side of roast. Cover grill; cook about 2 hours or until a meat thermometer inserted in meat, not ichingbone, registers l30F to 135F(55C)for rare, l50F to 155F(65C) for medium and l60F to 165F(70C 75C) for well-done.
Add more briquets every 45 minutes to maintain a constant temperature. Remove cooked meat to a carving board. Cover with foil; let stand about 10 minutes. After standing, internal temperature of beef should register 140F (60C) for rare, 160F (70C) for medium and 170F (75C) for 11-done.
Crack off salt coating, using paper towels to protect your hands because roast will be very hot. Rub side of roast with a clean, stiff brush to remove as much salt and ash as possible from crevices.
It is impossible to remove every trace of salt and ash; if desired, cut off outside layer from roast. To carve, cut across grain into thick slices; arrange sliced beef on a warm platter. Makes 6 servings.
